Ferran Andrià has achieved a bonafide gastronomic revolution with his research, so much so that the dishes which have been inspired by his creations are numerous and can be found at any level. However, there is a place in Italy which this legend lives. The reasoning and the sensory journeys of the Spanish chef, who is the consultant at Condividere, are proposed here through the hands of Federico Zanassi. We find the Spanish influence in the tapas with a few unmissable historic elements such as the parmesan gelato, a homage to Bob Noto, and the olives. They open a menu that is full of original, intelligent and fun elements. Italy is the protagonist, with a few exotic elements such as the ceviche of fruit and vegetables. Piemonte is present in the meats and in the gaufre made with ceci bean flour. There is a definite Mediterranean element in the spices, the marinades, in the use of fig leaves and Manteca for a butter and sage risotto where the sage is absent. Because of COVID, there are no longer sharing plates as was the original concept of the locale, but the element of conviviality is not lost thanks to an attentive and dynamic service. The interior is beautifully curated by the renowned designer Oscar Dante Ferretti. There is a rich wine list that is well-proposed, and which gives ample space to natural wines of great quality.
There are three proposed menus, the smallest in terms of the number of courses is 65 euros, the largest one is 95. There is an enviable price-quality ratio which allows one to comprehend how much this restaurant is a true cultural gift that the Lavazza family has given to the city of Turin rather than a business in and of itself.
