After a lot of “wandering”, from Pesaro, Gianluca Gorini chose the upper Savio valley for his restaurant. Decision dictated by the heart, and it is with heart and passion that he runs his restaurant. Located where the award-winning Locanda del Gambero Rosso restaurant reigned until 2017. Chef Gianluca Gorini has taken over the old cuisine of Giuliana Saragoni, which he has collected with enormous respect for the past of the location and the values of the territory. Impressing a new turning point based on a solid technique, on the inventiveness acquired over the years and open-mindedness. It's the result of the experience acquired in prestigious kitchens such as that of Paolo Lopriore. This restaurant is still young but already creditworthy. The service follows well-defined rhythms, the customer feels pampered by a staff who exercises competence and never become arrogant or boastful. Research is a common thread here, from the cuisine to the choice of wines with a particular orientation towards natural and biodynamic approaches. You can choose à la carte or rely on two tasting menus, “La vostra mano libera” (Your free hand) consisting of 4 or 5 courses and “La mia mano libera” (My free hand), which gives the chef the command over a 7 or 9-course meal. With the à la carte choice, we start with a tasty aperitif between wines and some creations (vermouth and bitters) by Maestro Baldo Baldinini and then we continue with the captivating and juicy “mezze maniche” (half sleeves) with mantis shrimp cream, burnt peppers and caper leaves (we must then do the “scarpetta” with the excellent homemade bread). And if the Romagna blackberry suckling pig tends to be pasty due to an excess of peanuts, the grilled lamb, stridoli, anchovy sauce and black truffle turns out to be the best dish of the evening for balance, intensity of flavors and skills in the art of grilling meat; another distinctive feature of the chef. Among the desserts, the “zuppa inglese” stands out (don't call it "deconstructed", Gorini doesn't like this definition). In conclusion: daGorini feels a bit like home, and this gives it the added value of a restaurant that fully deserves the star it has earned.
