A steaming loaf of bread prepared with whole-wheat flour and mother yeast, a basket of crispy homemade grissini breadsticks and a voluptuous salted butter mousse: this is the business card with which Chef Davide Caranchini welcomes the guests of the restaurant Materia in Cernobbio. Located a few minutes by foot from the shores of Lake Como. A place where local raw materials become the ideal base for building gastronomic charm, that looks beyond our borders even as far as the far East. The primary objective is always to enhance the taste of each dish, each ingredient, each spice, leaving the role of a very simple side dish to the final presentation. The restaurant allows you to order à la carte or to experiment with one of the tasting menus designed by the chef. There are currently two tasting menus, the “classic” with the most representative proposals of Caranchini’s cuisine, and the “Green Power”, in a vegetarian key. The opening act sees its peak of pleasure in a salted crème caramel with soy sauce and wasabi, we can wander between a soy trout and a grilled salad with black truffle and pumpkin cream, including a venison tataki with black truffle and a steamed partridge with cloves and smoked eel butter. We then move on to risotto with matcha tea and bergamot, ravioli with hare and mushrooms with spiced broth and coffee, or linguine with butter, agone garum and amchoor. We then continue with an incredible croaker with oyster mayonnaise and confit lemon, or with a rum marinated venison with cocoa beans. It ends with a ton-sur-ton of dark chocolate with yogurt and cardamom cream. Lastly, there is the infamous “gem” in a cup. Here you have the possibility to choose from the numerous coffees available on the menu, presented in great detail as it concerns origins, scents, and toasting. The dining room staff is attentive and gives warmth to a contemporary environment divided into two rooms. These could be improved in terms of attention to detail and personalization. The wine and beer lists are excellent with Italian and international proposal chosen with care and intelligence.
