Riding along the street of Vino Cesanese, which is also accessible by bicycle, you will get to the municipality of Acuto, which lies on the far east of the area where the Cesanese del Picglio DOCG wine is produced. Nù Trattoria Italiana dal 1960 is right there and it immediately presents itself as a perfect place to go to after a day spent discovering this beautiful area. The ramp which leads to the dining room is quite steep, which is the perfect excuse to walk slowly while enjoying the view of the valley. Once you get to the dining area, your first feeling is going to be “home”. There are only a few tables both inside and outside: a kitchen with open doors which allows you to get a glimpse at the 'intimacy' of the kitchen staff working the stoves. And, just like when you're home, it is unlikely to get the same dish every time, the menu follows seasonality and nature for the raw materials used, as well as the fantasy and mood of the chef. A sense of dignity is perceived, intended as a sense of respect for oneself and others which translates into consciousness of its own value. Therefore, the generous dishes arrive quickly at the table, simple and substantial. The combinations are more apt to follow common sense than experimenting. There is a wood oven for baking the bread, which “burns” the cherry tomatoes and roasts the meat; then there are the wild herbs which arrive at the table very fresh; and finally, grandma’s dressings, those which do not follow the rules. It almost seems to hear “dinner’s ready” and the ceramic pots with porcini mushrooms and sweet breads begin to arrive, the zucchini flowers stuffed with local ricotta and garnished with a tomato sauce, the fini fini (a typical pasta) with burnt tomatoes, pecorino and mint, the glazed pork ribs served with local ciociare herbs, the zuppa inglese (trifle) and so on. The wine? It can be chosen directly from the cupboard in the dining room, only a few bottles stored without any particular precision; a cellar which is probably destined to grow to be able to please the ever growing number of customers who are informed drinkers, and to be able to achieve the best pairings with the rural food offered here.
