In 1985 one of a generations’ cult films, “Back to the Future”, was released in theaters, in the same year the new chef at the Ristorante Romano at Viareggio, Nicola Gronchi, had not yet had his first birthday. During that year Romano Franceschini and his wife Franca won the very sought-after recognition of a Michelin star, and in the same year in London there was what is probably known as the biggest concert in the history of music, Live Aid, which will be remembered for Freddie Mercury’s performance, and which united an impressive number of international stars from different generations. The Ristorante Romano in Viareggio is history with the courage to reevaluate, the strength to respect itself and the determination of far-sightedness. Their regular customers could probably say that they could live off the stuffed baby squid, like in an infernal circle, always the same, but without ever getting tired of it, it is also available for take away with slavish reverence, it is in this context that the far sightedness of a great catering family has the obligation to rethink, moving the hands of the clock back to go back in time in order to mark a new identity in the kitchen. Nicola Gronchi has the 'anger', the personality and the creativity to make this project grow dramatically. A flawless dinner with a thrilling crescendo. The barbecue risotto with marinated mackerel, horseradish and sea urchins is unforgettable, the fusion of tradition with innovation is amazing in the crostini with wedge clams, in the bread crumble and chilli sauce, and even more so in the loaf of bread dough with mussels and the baccalà tripe with cardoncello mushrooms. All of this is to be paired with the right wine, with the help of Roberto Franceschini, one of the most competent sommeliers and maîtres in Italy, who has a very impressive, seemingly infinite list of options. An unmissable stopover for every true connoisseur of haute cuisine.
