In this ancient building in the center of the Brufa hamlet, brothers Vittorio and Gregorio Valloni have carried out a beautiful renovation with a very welcoming and detailed dining room on the ground floor that makes you feel at ease, and one upstairs. Olimpia’s kitchen, a tribute from the two twenty-year-olds to their mother, reveals Vittorio’s good technical mastery and a wisdom in the use of local products with some positive inspiration from outside. The dishes always have a well-balanced flavor and one is struck, in one of the “carnivorous” regions, by the sensitivity towards the vegetable element that emerges from the eggplants and zucchini alla scapece. The dining room is managed with sympathy and precision by Gregorio: there is a homely atmosphere where the choices of products and proposals are based on a deep modern culture of food as well as wine. It could not be otherwise in the town that hosts the most beautiful Wine Museum in Italy curated by the Lungarotti Foundation.
