The Sirk family’s Trattoria Al Cacciatore represents a landmark for Friulian gastronomy. It is situated in the heart of Collio Goriziano. It is characterized by a simple interior, both elegant and rustic at the same time, where you can enjoy a cuisine from the local territory that is distinguished by constant gastronomic research and the ideal union of tradition, history and passion. Only first-quality local products are used, among which is the house-made red wine vinegar, the D’Osvaldo prosciutto, and the Malghe cheeses from Prealpi Giulie. They are valorized and proposed with innovation. It is a menu composed of refined dishes, but at the same time with intense and recognizable flavors, such as the antipasto with goose liver and trout, which confers the right freshness, for an elegant dish with traditional flavors. Another dish with well-defined flavor is the venison with trout eggs and pistachio, representing the union of products from the land and fresh water. The venison fillet, seared alla brace and pink on the inside, is proposed with trout eggs for a perfect lightness and saltiness, this is united with a purée of full-bodied pistachio, culminating in a complete balance in flavor. The bond between tradition and innovation characterizes all of the dishes, which are always made with fresh, seasonal products. Even the pre-desserts and the desserts are original and change from season to season. The Isabella grape soup is a dessert composed of different elements with different textures: merengue, sorbet of Isabella grapes, a salty cookie and white chocolate mousse, accompanied by a soup of Isabella grapes and lime zest for a complete harmony of fragrance and flavor.
