Their customers are willing to wait in line even for an hour for a schiacciata. These are now famous worldwide thanks to the branch in New York and another that will open in Los Angeles. La schiacciata is a typical Tuscan focaccia made with olive oil. It is generously topped, mostly with classic Tuscan cured meats and cheeses: finocchiona, pecorino, crema di lardo, and they are made with various sauces such as truffle or porcini mushroom. There is a wide selection, from La Favolosa to the La Schiacciata del Boss, or you can vary the ingredients to create a personalized schiacciata. Vegetarian versions are also available.
