If you want to enjoy a journey into historic Sicilian flavors, one told with freshness and a modern technique that hints of the future, then this is the place for you. The menu is designed by Ciccio Sultano and the iconic elements of the island are all there: from Roman history, to classic history and the baroque period, from Gattopardo to the Arabic influence and Mori domination, everything “betrayed” – is executed and presented in a modern slant. Dining here becomes a contemporary experience which embraces the history of a place. The cooking expresses social stratifications and their ingredients, recipes from the working class, the bourgeoisie and sumptuous preparations from noble homes. It is a cultural and flavor melting pot that characterizes the entire menu. An example is the signature dish called Spaghetti in salsa Moresca Taratatà. It is a dish dedicated to the Madonna Santissima delle Milizie di Scicli, a legendary sacred figure who fought against the Emiro Belcane in a swordfight, the sound of which is commemorated in the dish’s name. The protagonist is homemade Sicilian wheat spaghetti served on cold-pressed carrot juice which balances the salty marine flavor of the red tuna bottarga. To complete the array of flavors is the citrus pesto softened by hints of elderberry and pink rosehip that brings notes of extravagance to the palate. The chef’s style explodes in a symphony of flavors and colors in the dessert proposals: from the cannolo with Ragusa ricotta on a warm cream of prickly pears from San Cono and a Pizzuta d’Avola almond sorbet, to the bitter baba with a soft vanilla cream and a sorbet of spiced coffee. The wine list is extensive and well-assorted, as are the lists for distilled spirits, liquors and cocktails. The dining areas are located inside the historic Palazzo La Rocca a few steps from the Ragusa duomo. This guarantees a warm and reassuring bourgeoisie sort of comfort; and the elegant and balanced service compliments it. There are two tasting menus: “Basileus Hyblon” tradition + betrayal = innovation, 160 euros; “Vento e Passione” the sea and the land, 140 euros. This tasting sequence is a very impressive journey through Sicilian Domination, capable of uniting an ingredient, a spice or a tradition from the Carthaginian, Greek, Roman, Byzantine, Arabic, Norman, Jewish, Aragonese, Borbonic, Hapsburg, or Piemonte cultural heritage which Ciccio Sultano interprets and catapults into the 21stcentury.
