The “Svuotafrigo delle sei di mattina,” (6am fridge emptier) is the succulent nighttime panino that Beppe Palmieri, owner of Da Panino and general manager of Massimo Bottura’s Francescana, would eat once he came home from his shift at the famous Modena restaurant. It is masterfully prepared with bread from Roscioli, grated tomatoes, hard-boiled eggs, stracciatella cheese from Andria, Milano salami and chives. It is still one of the most popular on the menu. The locale opened in 2013 just a few meters away from the Francescana with the idea of repurposing the deli shops that had disappeared from the neighborhood. It proposes a menu based on select products from small producers. Do not miss panino number 5, with grilled eggplant, smoked scamorza cheese, fiordilatte, tomato salad and Genovese pesto. We also recommend the tortellini alla superpanna, the carabonara di Panino and the tagliolini al pesto. There is a small wine list with labels from the local territory and craft beers. The mineral water and cover charge are free.
