L’Argine a Vencò


Antonia Klugmann’s world opens a window onto a modern vision of doing business in the restaurant sector; one that is more ethical, less aesthetic, more inclusive and respectful of the environment and health. We are in Collio, on a border between two communities that live peacefully while enriching one another with their traditions, products and visions. Antonia chose this area to open her restaurant which is rich in wines but also in various local fruits and “wild herbs” as she likes to call some of the ingredients in her delicious dishes. The restructured rustic décor welcomes you immediately as you enter: plants, contemporary pictures, furniture and dividers in light wood, musical notes and piles of books about wine and cooking.
Our advice is to let the kitchen and the dining room staff advise you on what to eat and drink, at least the for the first visit. The stupefying richness of the dishes, always made with few but precise elements, the chef’s incredible capacity to extract flavor, and the top-quality products are counterbalanced by the cantina. It invites curiosity with its interesting labels, and it is representative of the new expressive strength of Collio and Carso. Everything is curated down to the last detail. The bread, for example, is produced on site with a sourdough starter from Argine.
The dining area is small but airy. It overlooks the kitchen or the woods and the great vegetable garden which the passionate Antonia Klugmann takes care of personally. Harmony with nature and with oneself, great mastery of technique and passion. Here, the vegetable has just as much importance as the fish or the meat and this is one of the characteristics that makes this place so innovative. It has overturned a hierarchy that has its roots in lifestyles that do not exist anymore. The final dessert was fantastic; the service was perfect, well-informed and enthusiastic. On the whole, it is an unforgettable restaurant where creativity meets technique and where keeping the customer at heart is a primary objective. The best experience is staying overnight in one of the four beautiful guestrooms that are curated down to the last detail.
