In Acuto, NU’ Trattoria Italiana dal 1960 tells the story of Ciociaria through the cuisine of Salvatore Tassa, who starts from local ingredients to create personal dishes grounded in technique and a deep knowledge of the raw materials. The menu follows the seasons, alternating dishes rooted in tradition with original pairings. Excellent is the cabbage and chestnut soup, intense and well balanced, as are the fini fini, the local region’s delicate thin pasta, which confirm the attention devoted to artisanal craftsmanship. The main courses are equally convincing, with the wood-fired oven helping define textures and aromas. Desserts and wines complete a gastronomic journey of great interest. The pasta is prepared in full view, helping create a warm, homely atmosphere. Service is heartfelt, with Salvatore Tassa often present among the tables, happy to talk about his cuisine and engage directly with guests.
