A polished, harmonious dining room, well-paced service, and a lively, up-to-date wine list accompany Davide Del Duca\u2019s solid cooking, in which he rigorously selects ingredients without any unnecessary dogmatism. The Capitoline classics, from coratella to amatriciana (bonus) and tiramis\u00f9, sit alongside more creative dishes and seasonal forays, always underpinned by skilled technique. The fresh pastas are excellent, and the offal dishes are consistently convincing.
