Nel salotto buono della città di Torino, in piazza Carigliano, il ristorante Del Cambio ha aperto le sue porte nel 1757. Un luogo in cui si è scritta realmente la storia d’Italia ed è ben visibile e prenotabile il tavolo dove amava mangiare il conte di Cavour. Oggi conserva intatto il fascino antico ma con una bella spinta propulsiva in cucina e una rinfrescata di arte moderna in sala. Dirige l’orchestra uno dei più bravi chef italiani, Matteo Baronetto a cui è affidato anche il bistrò e iconico punto di riferimento per prime colazioni e aperitivi: La Farmacia del Cambio. La qualità dell’accoglienza è altissima, personale preparato e gentile come è giusto che sia in un luogo in cui si entra con grandi aspettative. In tavola piatti curati e tecnici che pur nel ricercare toni non banali restano comunque sempre molto leggibili e appaganti. Oltre al menù à la carte si potrà scegliere la cucina dello chef in 4, 6 o 9 portate. Da non perdere l’Insalata piemontese, un quadro edibile in cui convivono con grazia i prodotti simbolo della regione, come pure le Acciughe al verde o il Vitello Tonnato, entrambi i piatti sono attualizzati dalla più pura tradizione. Cotture millimetriche dei pesci, buonissime le carni. In stagione un menù dedicato al tartufo bianco, proposto con i piatti classici che lo esaltano, è il regalo perfetto che ogni appassionato desidera. Nota di merito per i dolci che qui hanno realmente una grande personalità, leggeri e estremamente golosi ed appaganti. You can still see and book the same table where the Count of Cavour loved to eat. Today its ancient charm remains intact, however, it has received an impressive boost in the kitchen and a refresh of modern art in the dining room. The kitchen that could be defined as an orchestra is directed by one of the best Italian chefs, Matteo Baronetto who is also entrusted with the bistro. In addition to the à la carte menu, you can also choose to try the chef's cuisine in 4, 6 or 9 courses. Don’t miss trying the Piedmontese salad, an edible work of art in which the region’s symbolic products gracefully coexist. The same is true for the anchovies al verde or the Vitello Tonnato, both dishes have been revisited to follow tradition. You’ll find a very precise cooking methodology for the fish, as well as excellent meat dishes. When in season, there is also a menu dedicated to white truffles, proposed with classic dishes that like to enhance it. It is the perfect perk for every cooking enthusiast. A note of merit also goes to the desserts that transpire personality, while being light and very satisfying to the palate.
