Located in the monumental heart of the city of Florence: you can eat in the internal room or in the spacious outside area from which you can enjoy the view of the Palazzo Vecchio. For more than two years (the establishment was opened in January 2018) this catering project has had the signature of Massimo Bottura and is guided, on-site by the young chef Karime Lopez. A warm friendly welcome, a carefully prepared room. You can choose from two sample menus (5 courses, the capitolo Rinascimento – 7 courses, il mondo attraverso i nostri occhi) or you can choose the menu a la carte, freely selecting dishes from the various options without the classical categorization of appetizer/first course/second course. The chef’s ‘welcoming dish’ is appealing (pappa al pomodoro and panzanella in bignè con sorbetto vegetale di alleggerimento); the scallop (raw) with carrot juice and sweet potato chips is tasty, well-balanced and enjoyable. Equally well-executed is the roasted octopus – tender as it always should be – with basil and pistachio pesto on “baby” potatoes. The risotto is ‘sweetly balanced’, perfectly cooked down to the last grain. The dessert is excellent: peach and rosemary, deliciously garnished with an artistic peach chip which recalls the emblem of the plates. There are some tiny but delicious titbits to end the degustation. Worthy of note is the bread and particularly the thin and crispy grissini.
