Aqua Crua


Lo chef Giuliano Baldessari è diventato noto al grande pubblico nella sua veste di giudice nel programma televisivo Top Chef ma la critica gastronomica lo amava già da anni. Prima una lunga gavetta che lo ha visto per anni anche di fianco ad un mostro sacro come Massimiliano Alaimo e poi l’apertura nel 2013 del suo ristorante che raggiunge da subito apprezzamenti e riconoscimenti. Siamo in un piccolo paese dei Colli Berici. Ambiente elegante ma divertente e colorato con la suggestiva parete di piante e cucina a vista al centro della sala. Un vero spettacolo osservare i movimenti della brigata. I piatti spiazzano per abbinamenti, giochi divertenti, utilizzo di ingredienti inconsueti. Troveremo muffe, funghi, fermentazioni. Sicuramente una cucina lontana dalla banalità, pensata, ragionata, spinta in direzioni spigolose ma mediata da tecnica perfetta e palato millimetrico dello chef. Due i menù proposti, uno con i piatti più rappresentativi e l’altro con le nuove creazioni. Da non perdere la Bresaola, in cui la bresaola non c’è. Sono sottili e morbide fette pomodoro essiccato condite con petali di Parmigiano. Un piatto pieno di gusto. Altra chicca il Tamarindo, un assaggio di ricciola marinata che vale il viaggio. Ad accompagnare piatti dalla grande personalità un ottimo servizio di sala che potrà consigliare anche centrati abbinamenti al calice.


Chef Giuliano Baldessari became known by the general public as one of the judges on the TV show Top Chef, but we was already beloved by food critics years before. He first had a long apprenticeship alongside such great legend as Massimiliano Alaimo. In 2013 he opened his restaurant which immediately received appreciation and recognition. Located in a small town in the Berici Hills, the environment is elegant, fun and colourful with walls of plants and an open kitchen in the center of the room. It’s a real spectacle to observe the movements of this brigade. The dishes astound for their combinations, as if it were a fun game, using unusual ingredients. You’ll find molds, fungi and fermentations. Definitely not a trivial cuisine, well thought out and conceived. A cuisine that pushes towards more edgy directions, meditated by the chef’s perfect technique and exceptional palate. Two tasting menus are offered, one with the most representative dishes and the other with new creations. Don’t miss out on trying the Bresaola, which is actually not Bresaola at all. It is thin and soft slices of dried tomato topped with Parmesan petals. A dish full of taste. Another gem is the Tamarindo, a taste of marinated amberjack that, it alone, is worth the trip. Accompanying these great dishes is an excellent dining room service that can also recommend excellent wine combinations by the glass.
