Al Borgo Brufa, sulle colline tra Perugia e Torgiano, il ristorante Elementi è la parte più concreta dell’esperienza: qui vai se vuoi capire davvero cosa può diventare la cucina umbra quando la materia prima viene messa al centro senza retorica. In cucina c’è Andrea Impero, uno chef che lavora più con i produttori che con gli effetti speciali. Ha costruito una rete fittissima di piccoli fornitori locali e da lì parte per dare forma a menu che cambiano spesso, seguendo stagioni e raccolti. I suoi piatti non inseguono l’estetica: cercano coerenza. “Pasta & Cipolla”, le crioestrazioni vegetali, i richiami al bosco e alla collina raccontano la regione senza copiarne i cliché. Il ristorante è dentro il resort, ma funziona anche come meta autonoma: arrivi, ti siedi, mangi una cucina che sa dove vuole andare. È una tappa utile per chi cerca una cena limpida, centrata, capace di restituire l’Umbria per com’è oggi. Consigliata la bellissima e funzionale spa.
