On the map of the “places of joy,” there is this historic late-19th-century wine tavern, a beautifully kept Bergamasque venue with a splendid outdoor seating area. Anyone lucky enough to cross its threshold has experienced that joy: a cuisine of the land, rooted in the soil and in the territory, a cuisine of memory with a watchful, attentive eye on the present and the future, offering wholesome, light, balanced, and easily digestible dishes. Half the work is done by the freshness of the ingredients, sourced from the adjacent vegetable garden or from nearby towns. In the kingdom of casoncelli, a local and traditional dish known since 1386, an entire family has been taking care of pilgrims along Via De Gasperi in Ambivere since 1932: father, mother, and two sons. Fiorella Visconti, the owner, who has the honor and the burden of passing down the dishes of the generations before her, has for years relied on the collaboration of seasoned and trusted staff both in the dining room and in the kitchen. Before expressing itself, the kitchen has carefully studied the map of Lombardy and firmly set its sights on the province of Bergamo: adherence to a place, consistency, here we are, this is who we are, and this is what we must enhance; authenticity, as in a document, even on the menu; identity. From homemade pasta to meats, from the humble dishes of peasant tradition, and then the superb, cultured wine selection: in short, one of the most authentic experiences one can have in Italy.
