Bianca is a Roman trattoria with a contemporary approach and a now well-defined personality. A polished, harmonious dining room, well-paced service, and a lively, up-to-date wine list accompany Davide Del Duca’s solid cooking, in which he rigorously selects ingredients without any unnecessary dogmatism. The Capitoline classics, from coratella to amatriciana (bonus) and tiramisù, sit alongside more creative dishes and seasonal forays, always underpinned by skilled technique. The fresh pastas are excellent, and the offal dishes are consistently convincing. A contemporary address, but without forced trends, where local produce and tradition are reinterpreted with restraint and personality, and where you dine very well, not least thanks to the professional service.
