In the historic center of Ceglie Messapica, Cibus welcomes guests in historic stone dining rooms carved out of an ancient convent. Its cuisine preserves the Apulian tradition with local ingredients and well-crafted dishes, without unnecessary embellishments. The house appetizer is a journey through the local area: zucchini flowers stuffed with ricotta and almonds, podolica stracciatella with black truffle from the Murgia, baked eggplant, and fried lampascioni. From the grill come bombette, sausage, lamb, and suckling pig, accompanied by potatoes cooked under the ashes, which alone are worth the trip. Finish with cegliese biscuits. Prices are in line with the quality. Excellent wine list. Outstanding service.
