“Da Doro” is housed in the oldest building in Solagna, at the entrance to the Valbrenta along the road to Trentino. The Scapin family cooks ingredients typical of the Veneto region, reinventing and reinterpreting regional classics (bacalà, risi e bisi, herring, eggs and asparagus) while also adding contemporary creations (ricotta and caponata, vegetarian burger, rabbit liver pâté). Farmyard poultry is always featured, especially in the white ragù served with fresh pasta and in skillet-cooked dishes. From the nearby Brenta River comes the tradition of trout, prepared in variations that follow the seasonal changes of the menu. The wine list spans several regions, with excursions into Austria, Slovenia and France.
