Two short but intense years at Hémicycle in Paris, which captured the attention of enthusiasts and critics from the very beginning. A contemporary cuisine that had Italian style, a love for natural acidity, seasonal ingredients, and some icons. A skilled hand with desserts. Even during our late summer visit, we were surprised by the freshness of the ideas and the never banal work on the products. Today is a time of great changes, those doors have closed and, from November 2025, we can rediscover dishes and thoughts from Substance, another restaurant of the Eclore group by Stéphane Manigold.
