Siamo ad Olevano Romano, un borgo che si erge sul Monte Celeste a pochi chilometri da Roma, terra di Cesanese del Piglio, ma noto soprattutto perchè è la casa di una delle realtà più concrete e significative della ristorazione italiana. Sora Maria ed Arcangelo è una trattoria che racchiude in se tutti i valori che rendono l'Italia un paese unico. Il rispetto delle tradizioni, del territorio, la passione e la dedizione di una famiglia si annusano non appena si varca la soglia del locale. L'ambiente è caldo, colorato, avvolgente con un'accoglienza che ti fa sentire subito parte della casa e della famiglia. Ma la cosa che in assoluto più gratifica e sorprende è la cucina. Lo chef Gianni Milana ha raggiunto quel difficilissimo equilibrio fra il rispetto della tradizione e la leggerezza di una sapientissima interpretazione della contemporanietà. Magistrale è la capacità di rendere leggeri ed estivi piatti con ingredienti importanti grazie al sapiente uso delle temperature ; come avviene nelle zuppetta fredda e piccante al pomodoro che accompagna le frittelle di baccalà mantecato o nella trippetta di vitello con gaspacho. Certo è che Milana ha anche un notevole talento nella gestione della cotture: della carne (l'abbacchio ed il bollito eccelsi), delle verdure (la giardiniera croccante e la melanzana intera perfetta della parmigiana) ed ovviamente del quinto quarto (coratella magister vitae!). L'amore per i prodotti del Lazio accompagna tutto il menù ma risulta un punto di osservazione privilegiato con sguardi a tutto campo sull'Italia come possiamo notare nella carta dei vini che offre anche etichette estere. I contrappunti di acidità e l'abile uso delle erbe aromatiche completano il portfolio dello chef. Il sogno sarebbe avere Sora Maria ed Arcangelo sotto casa.

We are in Olevano Romano, a village which is set on Mount Celeste a few kilometers from Rome, in the land of the wine Cesanese del Piglio, but mostly known because home to one of the most tangible and significant Italian cuisines. Sora Maria ed Arcangelo is a tavern which encloses all the values which make Italy a unique country. Respect for tradition and for the territory, the passion and the commitment of the family can be felt as soon as you walk through the door. The atmosphere is warm, colorful, it wraps itself around you with a welcome that makes you feel at home and part of the family. But the most surprising and rewarding part is the kitchen, Gianni Milana, the chef, has reached the difficult balance between respect for tradition and the lightness with an incredibly wise interpretation of contemporaneity. His ability to make dishes which contain important ingredients light and summery is masterful, thanks to his knowledgeable use of the temperatures as in the cold spicy tomato soup which goes with the creamed baccalà fritters, or in the veal tripe with gazpacho. Milana has also a remarkable talent in controlling the cooking: from the meat (the lamb and the boiled meat are excellent), to the vegetables (the crispy pickled vegetables and the perfect whole egg plant parmigiana) and obviously the quinto quarto (offal) (coratella magister vitae!). The love for the products from the Lazio region accompany the menu, but it is not limited to it and gives you an all-round glance at Italy as a whole, as we can see from the wine list which also offers foreign labels. The acidic counterpoints and the skilful use of the aromatic herbs complete the chef’s portfolio. To have Sora Maria ed Arcangelo near home would be a dream come true.
